Dulse's striking ruby-red colour comes from phycoerythrin, a natural pigment rich in polyphenols. You may occasionally notice a white "bloom" on the flakes — that's a natural sea-mineral crystallisation, and is actually a mark of high-quality seaweed, not a fault.
