There’s a bit of a quiet buzz around polyphenols at the moment, and for good reason. These are the compounds plants use to protect themselves from stress — sun, salt, wind, oxidation — all the things that would otherwise damage their cells. When we eat those plants, we get the benefit of that same protection.
